No matter whether they’re red, white, cavas, Spanish or foreign, he always manages to find nuances which allow him to recommend one or another for any occasion from among 300 references.
Santiago’s cuisine is innovative but never abandons its roots. The most important aspect of his cooking is the presence prime ingredients which are always, if possible, locally produced. Thus, he makes sure to meet the producers personally, from whom he requests advice and tries to learn day after day.
